Spicy Couscous Recipe
Ingredients:
1 cup couscous
1 tsp red chilly flakes
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp ginger-garlic paste
2 green chillies
5-6 curry leaves
1 large onion
2 tomatoes
1 tablespoon cooking oil
A few drops of lemon/lime juice
1/2 tsp of sugar
Fresh coriander leaves for garnish
2 cups warm water
Salt to taste
Method:
Peel and chop the onion finely. Slit green chillies in half and remove seeds and middle stem(as this part of the chilly is very hot!). Chop the chilly. Also chop tomatoes.
In a medium sized pan, heat oil. When the oil is hot add mustard seeds and cumin seed. Partially cover the pan and allow the mustard to sputter for half a minute(not too long as it burns easily).
Add curry leaves, chopped green chilly to the pan and stir fry for a minute or two. Then add the onion and saute till it is transparent. Add tomatoes and fry for another 5 minutes(till tomato is soft but not paste like).
Add turmeric, coriander powder, red chilly flakes, and ginger-garlic paste to pan and fry again for a couple of minutes. Finally, put in the couscous. Mix all ingredients together(do not stir too hard when doing so).
Pour two cups of warm water into the pan. And sugar and salt to taste. Squeeze a few drops of lemon/lime juice over the couscous and cook till all the water is absorbed.
Serve spicy couscous hot garnished with a few leaves of fresh coriander(optional) and (if you live in India) a small milk sweet such as “doodh pedha” is a fantastic accompaniment for this dish.
