Preparing Salad asparagus, dried tomatoes and Parmesan
1 Prepare the asparagus (wash, peel, cut the tip too hard). Plunge them into boiling water over time they become softer, keeping a little crisp (about 5 minutes, but monitor). The pass under cold water and set aside .
Put 2 slices of Serrano ham DNAS ovenproof dish, and pass under the broiler, watching carefully. Once they get a little more crisp, return. Then pat dry with a paper towel. The book , they become really crunchy resting.
3 Prepare the vinaigrette: put a touch of mustard DNAS a bowl, add the vinegar and pepper and mix. Add oil and mix again.
4 Cut the dried tomatoes into strips.
5 Put in individual dishes or in a bowl in the order: lettuce, asparagus just lukewarm, dried tomato slices. Drizzle with dressing. Using a peeler, make shavings of Parmesan to arrange on top of the salad, then add the pieces of crispy Serrano ham.
