In a large salad bowl combine
2 quarts mixed salad greens
2 cup fresh strawberries cut in half or sliced
1 small cucumber thin sliced
1/2 cup sweet onion slivered
1/3 cup coarsely chopped walnuts
Sprinkle lightly with raspberry vinaigrette (or allow each person to add their own)
Chill before serving
Serve on individual salad plates and garnish with a dab of plain yogurt and a carrot curl. Serve with a whole grain dinner roll and butter.
This makes a wonderful light lunch with a tall glass of lemonade or your favorite beverage or as an appetizer before your main entrée. This recipe serves 6 to 8 people as an appetizer and 4 to 6 people as a lunch salad. When served for lunch I like this with a grilled cheese sandwich made with mild cheddar cheese. Cheese is a wonderful compliment with most any salad and goes very well with strawberry.
