Chef Salad Recipe Made Mexican Style

This recipe is an adaptation of a recipe submitted by Mrs. Louise G. Want to “The Best Cooks Live in Stanislaus County California that came out in the 1970’.

Ingredients:

  1. 2 pounds ground beef
  2. 1 large heat of lettuce
  3. 1 large chopped onion
  4. 1 ½ pounds of grated cheddar cheese
  5. 1 bag of taco chips
  6. 1 can of kidney beans, drained
  7. 8 ounces of French salad dressing
  8. 1 teaspoon salt
  9. Pepper
  10. 4 medium size tomatoes, chopped

Directions:

  1. Combine chopped lettuce, tomatoes and onions.  Crumble taco chips over the vegetables.  Add cheese, French dressing and toss well.  Set in refrigerator.
  2. Brown ground beef and drain off the excess fat.  Salt and pepper to taste.  Stir.  Add drained kidney beans and simmer for 15 minutes.  Combine the meat and beans with the salad and serve immediately.
