Spanish Shrimp Salad

MATERIALS:
500 g large prawns cooked
2 large sweet orange
1 small mignonette or cos lettuce
1 small red onion, sliced
2 tablespoons red wine vinegar
1/2 cup olive oil
1/2 teaspoon grated orange peel
1 clove garlic, crushed

HOW TO MAKE A SPANISH SHRIMP SALAD:
1. Peeled shrimp and leaving tails. Remove veins.
Peeled orange with a small knife in a circle. Husk that can be peeled apart.
(Save some for grated orange peel). Take each section of meat juice by cutting between the epidermis and flesh.
2. Wash and dry lettuce. Arrange the lettuce on a serving plate.
Place the shrimp, lemon and onions on top.
3. Place the vinegar, olive oil, orange zest and garlic in a jar with a lid tightly, shake
until smooth. Pour dressing over salad and serve immediately with bread.
