Ingredients:
1 small pineapple (sliced into rings)
A quarter teaspoon of ground cinnamon
3 tablespoons of honey
4 tablespoons castor sugar
125 grams pitted dates (diced)
50 grams cashews (toasted)
3 tablespoons of lemon juice
1 paw paw (cleaned, seeds removed and diced)
2 large bananas (sliced into rings)
2 large oranges( peeled and seeds removed)
1 cup sour cream ( or yogurt)
Dessicated coconut to garnish
Method:
Remove the core from pineapple rings and dice the flesh.
Slice the oranges into thin rings and again into quarters.
Toss the sliced bananas with a little lemon juice ( 1 tablespoon)
Mix the prepared fruit with dates and paw paw slices.
Use a flat bottomed large glass bowl.
Sprinkle with castor sugar.
Add remainder of lemon juice.
Refrigerate for up to three hours.
Mix sour cream,cinnamon, honey and cashews into a separate bowl.
Refrigerate.
Just before serving, swirl cream mixture through the fruit.
Sprinkle dessicated coconut over the top to garnish.
Serve cold as a fridge dessert.
Tips:
Many variety of dates are available. The pitted soft textured black dates is preferred.
Pitted olives can also be added to the fruit mixture. (green or black)
