Colourful Couscous Salad Recipe
Ingredients:
1/2 cup couscous
1 cup water
1 tablespoon virgin olive oil
A pinch of turmeric powder
A few drops of lemon juice
1/4 teaspoon of black pepper powder
1 teaspoon of sugar
1red apple
1/2 green apple
2 handfuls of pomegranate seeds
1 medium sized potato
1/2 tin of drained pineapple chunks
3 tablespoons of finely chopped mixed peppers(red, green, and yellow)
2/3 large leaves of iceberg lettuce
Salt to taste
1 tablespoon of chopped fresh green coriander leaves
A few fresh mint leaves.
Method: Before you start preparing this salad you will need to cook the couscous, to do this: Place pan on fire and roast couscous in dry pan for a couple of minutes. In the meanwhile boil some water and add one cup full to the couscous. Season with salt, lemon juice and turmeric powder. Turn off the flame when all the water is absorbed. Add olive oil and sugar and stir slightly.
Peel potato, cut into cubes and boil till soft(but firm). Drain the excess water from the boiled potato and leave to cool. Chop the red and green apples. Mix together the chopped peppers, potato, apples, pomegranate seeds and pineapple chunks. Season salad with pepper, lemon and salt. Wash the lettuce and tear into one inch squares. Add lettuce to the salad mix and combine well.
When the cooked couscous is sufficiently cooled add it to the salad and mix well. Season with more salt, pepper, and/or lemon juice according to taste. Garnish with chopped coriander and mint leaves and serve on a bed of lettuce or plain. You can also serve this colourful couscous salad chilled. For extra cooling, just leave the prepared salad in the the refrigerator for a couple of hours before serving.
