CHEESY SQUASH CASSEROLE
6 Cups Yellow Squash, diced
1 Large White Onion, chopped
4 Tbsp. Butter
1/4 Cup Mayonnaise (not salad dressing)
1/4 Cup Sour Cream
1/2 Cup Cheddar Cheese, grated
1/2 Cup Mozzarella Cheese, grated
1/2 Cup Gruyere Cheese, grated
1 Cup Seasoned Breadcrumbs
1/8 Tsp. Sea Salt
1/8 Tsp. Black Pepper
1/8 Tsp. Garlic Powder
Preheat oven to 375 degrees. In a large saucepan, steam the squash until it is cooked; remove and set aside to drain thoroughly. In a small saucepan, saute onion in butter until opaque. In a large mixing bowl combine squash, onion, salt, pepper and garlic powder and blend well. Pour mixture into a 9 x 13 glass dish, topping with breadcrumbs. Bake for 20 minutes
