Usually with dinner I serve either a salad or pieces of cut up fruit or sometimes both. If I don’t list the salad or fruit, you can be sure that it was still on the table for those who wanted it. We don’t eat dessert right after supper so you won’t find any chocolate cake or ice cream with these meals. My husband and kids usually eat something before going to bed, but I don’t, unless it’s popcorn (once a week) while watching a movie.
Since the new year starts on a Tuesday, I won’t be listing a full week’s worth of meals here, but I am still keeping track of them and will be adding a new list very soon, if anyone is interested.
Sometimes I eat a different meal than what I cook for my family. I am trying to cut back on pasta and breads, so this is just a list of what I cooked, not always what I ate personally.
Tuesday, January 1, 2013 – Penne pasta with tomato sauce and broccoli, and a mixed baby green salad with balsamic vinaigrette.
Wednesday, January 2, 2013 - Fritatta (Italian style omelet) with with deli turkey, green onion, and asiago cheese, and a mixed baby green salad with balsamic vinaigrette. There was still some leftover pasta from the night before as well. I had the fritatta and salad – no pasta.
Thursday, January 3, 2013 – Penne pasta with olive oil, green beans, zucchini, parmesan cheese, and black pepper. I also made beef patties (frozen and baked in the oven), breaded haddock (frozen and baked in the oven), and mixed baby green salad, for those that didn’t want pasta, like me. I just had a beef patty and salad.
Friday, January 4, 2013 – Beef stew with potatoes, carrots, butternut squash, and dumplings. My family likes to eat bread with stew and soak up the gravy, but I didn’t… too many carbs for me!
Saturday, January 5, 2013 - Spaghetti and meatballs (At my parent’s house so I didn’t do the cooking)
Sunday, January 6, 2013 - White rice with chicken breast in a cream of mushroom/salsa sauce. Instead of salad I served sliced cantaloupe and pineapple.
